I’ve always been a fan of pumpkin. Growing up, we had a friend who made great pumpkin bread, one who made pumpkin bars, and one who made THE BEST pumpkin roll! #Yum
Over the last lets say 5 years, each “unique” flavor has become a fad (Red Velvet, Cake Batter, Pumpkin…) and is found in practically everything! I don’t remember pumpkin being such a HUGE deal 10 years ago…but within the last 5 it’s only getting crazier and crazier.
Well, allow me to introduce you to THIS hilarious list! I agree that some of it has no business including pumpkin in the ingredient list (I’m looking at you Jif Peanut Butter!)
I will say, I used to really like the Pumpkin Frozen Yogurt from Pinkberry – but our local Pinkberry closed around 2 years ago so it’s been awhile since I’ve enjoyed that tasty treat, but I refuse to try the Pumpkin Chobani Greek yogurt.
And now for one of my favorite pumpkin recipes…where pumpkin should be included: The Pumpkin Spice Latte
1 Cup freshly brewed coffee
2 Tablespoons Libby’s canned pumpkin (NOT Pumpkin Pie)
1/4-1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla
1/2 cup milk or half & half or heavy cream – whatever makes you happy 🙂
*you may add a teaspoon or so of sugar if you’d like*
Warm it all on the stove until the pumpkin is “melted” into the milk/coffee. It may be easiest to warm the milk/melt the pumpkin while the coffee is brewing and then just add the pumpkin milk to the coffee mug. You may even finish it with some whipped cream and a dash of cinnamon if you’re fancy! 🙂
